Pasteurisation and ultra-filtration make honey look better and taste like less. Exactly what those processes remove, and why raw honey crystallises.

Raw Honey vs Processed Honey: What You Lose When It's Heated

Walk down any supermarket aisle in India and every honey bottle looks identical: clear, golden, perfectly pourable, exactly the same shade in January as in June. That uniformity is not a natural property of honey. It is manufactured, and it costs something.

What happens inside a commercial honey plant

Two processes turn variable, cloudy raw honey into that uniform product.

Pasteurisation

The honey is heated to roughly 60–70 °C. Officially this is to kill yeasts and prevent fermentation. In practice its main commercial value is that heat dissolves existing sugar crystals, so the honey stays liquid on the shelf for much longer.

Ultra-filtration

The heated honey is then forced through very fine filters, often under pressure. This removes wax, air bubbles — and pollen. Pollen removal is significant, because pollen is the only thing in a jar of honey that can tell a laboratory which flowers and which country it came from. Honey without pollen is honey without a passport.

Note that last row. Honey is roughly 80% sugar either way. Raw honey is not a health food that processed honey is not — the honest difference is in flavour, aroma, traceability and the enzyme and antioxidant fraction that heat degrades.

Why raw honey crystallises (and why that is good news)

Honey is a supersaturated solution of two sugars: fructose and glucose. Glucose is the less soluble of the two, so over time it comes out of solution and forms crystals. This needs seed points — tiny particles of pollen or wax — to start.

Ultra-filtration removes those seed points and pasteurisation dissolves any crystals that have already formed. That is the entire reason commercial honey stays clear. It is a processing outcome, not a sign of quality.

Different honeys crystallise at different rates depending on their glucose-to-fructose ratio. Multiflora honey often sets within weeks in winter. Some forest honeys stay liquid for months. Both are normal.

To liquefy crystallised honey: stand the closed jar in a bowl of warm water — not boiling — for 15–20 minutes and stir. Never microwave it, and never heat it directly on a flame; you will do to your honey exactly what the factory does.

What "raw" should mean

The word "raw" is not tightly regulated in India, so it is worth knowing what to ask. Honey worth calling raw is:

  • Unheated — never taken above hive temperature, around 35 °C.
  • Coarse-filtered only — strained through a mesh to remove wax and bee parts, nothing finer.
  • Unblended — from one apiary and one flowering season, not mixed to a standard taste.
  • Traceable — the seller can tell you where and when it was harvested.

Should you switch?

If you use honey purely as a sweetener in tea, the processed jar does the job. If you want honey that tastes of the flowers it came from, that you can trace to a place and a season, and that keeps the enzymes and aroma the bees put in it, raw is the only option.

Our wild forest honey and multiflora honey are both cold-filtered and unblended. They crystallise. They vary. That is the point.

Frequently asked questions

Is raw honey better than processed honey?

Raw honey retains its natural pollen, enzymes and aroma compounds, which pasteurisation and ultra-filtration reduce or remove. Nutritionally both are still mostly sugar, so the real difference is in traceability, flavour and the enzymes and antioxidants that survive in unheated honey.

What temperature damages honey?

Honey begins to lose heat-sensitive enzymes such as diastase and invertase above roughly 40 °C, and HMF (hydroxymethylfurfural, a marker of heat damage) rises sharply with sustained heating. Commercial pasteurisation runs at 60–70 °C, well beyond that threshold.

Why does supermarket honey never crystallise?

Because it has been pasteurised and ultra-filtered. Removing pollen and other fine particles takes away the seed crystals that honey needs to start crystallising, and heating dissolves any crystals already present. The result stays liquid for years, which is a processing outcome, not a quality one.
